The Experience

Discover the distinctive flavours of the Cape Floristic Region at the Cape Town Fynbos Experience® in Wellington, in South Africa’s Cape Winelands.

Personally hosted by Giselle Courtney, founder of South African Fynbos®, this guided encounter introduces eleven edible Fynbos botanicals from the world’s richest floral kingdom through their aromas, flavours and culinary possibilities. Explore fresh botanicals, herbal infusions, wild culinary herbs, cordials, botanical salts and pepper, vinegars, syrups and digestives, discovering how different methods of extraction reveal each plant’s character.

Hosted in the botanical cellar and on the farmhouse verandah of a contemporary private estate, the experience includes an interactive tapas lunch showcasing the complete South African Fynbos® Culinary Collection and a scenic stroll through the farm’s rare and ancient renosterveld.

What is Fynbos?

Fynbos gives the southern tip of Africa a botanical identity found nowhere else. This hardy, exceptionally diverse vegetation defines the Cape Floristic Region, whose protected landscapes hold UNESCO World Heritage status. Fossil pollen records trace its presence at the Cape to at least five million years ago. The Cape Town Fynbos Experience® offers an intimate introduction to this ancient botanical world.

Your Host Giselle Courtney

Giselle Courtney is the founder of South African Fynbos® and creator of the Cape Town Fynbos Experience®. A culinary Fynbos specialist and organisational development practitioner, she explores the relationship between people, flavour and landscape. Her personally hosted tastings bring the Cape’s distinctive botanicals into contemporary culinary life.

About Wellington

Wellington is a country town in the Cape Winelands approximately 75km NE of central Cape Town. Historic wine farms, orchards and the Hawequas Mountain create a distinctive sense of place. Its intimate wine route, Fynbos landscapes and nearby Bain's Kloof Pass offer visitors a compelling combination of flavour, nature and personal hospitality. It's also here that the botanical story meets a deeper human history. Stone hand axes found in the valley belong to a toolmaking tradition reaching back some 1,8-million years - one of humanity's earliest expressions of shaping material with purpose. Among the vineyards and wild Fynbos, a visit acquires an unusual dimension: the opportunity to encounter a landscape where flavour, human ingenuity and deep time share the same soil.
