Discover the Wild Flavours of South Africa at the Cape Town Fynbos Experience®
Step into an extraordinary sensory world with Giselle Courtney as she unveils the captivating flavours, aromas and chemistry of South Africa's ancient wild culinary botanicals at her Fynbos farm in Wellington, 75km NE of Cape Town.
This immersive experience introduces eleven remarkable Fynbos species whose distinctive botanical profiles are inspiring some of the country's most innovative chefs, distillers and artisans.
At the heart of the experience is Giselle's bespoke Cape Town Fynbos Experience® Tasting Tray - an exquisitely curated progression of infusions, botanical extracts, seasonings and artisanal pairings that guides the palate through an intelligent flavour journey. Designed as a sensory map rather than a simple tasting, each element builds upon the last, revealing the surprising complexity, chemistry and culinary versatility of indigenous Fynbos through a carefully choreographed sequence of flavour discoveries.
As your palate awakens to intricate layers of honey blossom, fruity caramel, minty blackcurrant, pine resin, flinty petrichor, bittersweet mange tout, citrus rose, minted geranium, floral spice, herbaceous sage and liquorice-laced curry, you'll begin to recognise the distinctive signatures of each botanical. Before long, you'll be inspired to cook, bake, infuse and craft cocktails that celebrate the remarkable flavours of South African Fynbos®.
The experience continues with a gentle walk through a private renosterveld reserve—a rare remnant of one of South Africa's most endangered and botanically diverse ecosystems. The journey culminates in an experimental Fynbos-inspired tapas lunch, where each tasting explores the character of the indigenous herbs, revealing how their distinctive flavours, aromas and textures can transform everyday cooking.
Creator of the South African Fynbos® Culinary Collection, Giselle has spent the past decade revealing the extraordinary culinary potential of indigenous Fynbos. Her pioneering work explores how this ancient floral kingdom can heighten sensory awareness, nourish creativity and cultivate a profound sense of wellbeing.
