The Cape Town Fynbos Experience® is one of the most distinctive culinary and botanical experiences in South Africa, offering an immersive journey into the extraordinary flavours of the Cape floral kingdom.
Located in Wellington in the Cape Winelands, this unique Cape Town experience introduces eleven edible Fynbos botanicals. Guided by the South African Fynbos® Flavour Wheel, enter a world of indigenous herbs, aromatics and rare flavours increasingly celebrated by leading chefs and food innovators.
Hosted by South African Fynbos® founder Giselle Courtney, the experience explores the flavour architecture of Fynbos through a carefully curated progression of tastings. Each botanical is experienced in multiple forms, demonstrating how heat, sweetness, acidity, salinity and alcohol can transform and enhance flavour, revealing remarkable dimensions hidden within these rare and ancient ingredients.
From raw botanicals and delicate herbal teas to infused salts, pepper, vinegars, syrups, digestives and contemporary culinary applications, the experience showcases how edible Fynbos is shaping a new generation of South African cuisine. Practical flavour-pairing insights and culinary inspiration provide a fresh perspective on indigenous ingredients and their role in modern gastronomy.
A guided exploration of the private estate offers deeper insight into the ecology of the Cape Floristic Region, the world's richest botanical kingdom.
